Dry Cured York Gammon Joint
Our dry cured York style gammon joints are the very best you can get. York style hams are traditional from our part of the world and are known for the supreme depth of their flavour and great texture.
We dry cure our hams for around 3 to 4 weeks to deepen the flavour and draw out the moisture before we air dry them further till they're absolutely perfect.
These are ready to either roast straight away and form the very best cracking or slowly simmer.
It's best to soak the ham in the fridge for 24hrs to reduce the salt content

Defrosting
Best: leave it in its vacuum pack on a plate on the bottom shelf of the fridge. Chops, rashers and small packs take about 12 hours; joints can take 24 hours or more.
Quicker: keep it in the vacuum pack and submerge it in cold tap water, changing the water every 30 minutes. Cook it straight away once defrosted.
Never defrost meat at room temperature.
