Slow-grown for 81 days on Yorkshire pasture. Golden skin, proper depth of flavour, and bones worth keeping.

Spatchcock Chicken
With the backbone removed and the chicken butterflied, it is ready for the grill or a hot oven. It cooks evenly, with crisp skin, and is on the table in 40 minutes.
